The term “grass-fed” is somewhat misleading, because bison and cattle all eat grass to begin with. Grass-finished is where the reported health benefits come from. It’s the finishing, not the feeding.
Grass-finished bison is a very small part of the bison industry as a whole. Some projections put it at less than 10% of bison meat actually finished on grass. Our focus on grass finishing matters to us, and we hold to it.
In our effort to provide a good quality product, we operate in a co-op environment with like-minded operators. We work as local as we can to bring you our products. Some of what we sell comes from our own ranch, and some comes from partners who finish their animals on grass the same way we do.
Bison steak is deeper-flavored than beef and runs about 95% fat-free when grass-finished. Cook it a little less than you would a beef steak. It wants to stay rare to medium-rare.
The classic. Rich flavor and a tender bite. One of the best steaks you’ll ever have, bison or otherwise.
Our most delicate cut. Mostly destined for restaurants in Atlanta, but we keep some back for folks who call ahead.
A hearty steak with great texture. Pairs perfectly with a cast-iron skillet and a little butter at the finish.
A workhorse cut. Excellent for grilling, and more forgiving with cook time than the leaner options.

We believe in honoring what the animal gives. The meat is what most folks come for, but the rest matters too. Bones, hides, skulls, and the herbs growing alongside the pasture all find their way into the hands of people who put them to good use.
Bones are one of the most asked-about products we carry. They go home with folks making bone broth, slow-simmered stocks, and the kind of nourishing pot that needs hours and patience. We also sell bones to carvers, painters, and craftspeople. Members of the Native community in particular have long worked with bison bone, and we’re glad to keep that tradition supplied. Hides and skulls go to artists, craftspeople, and members of the Native community who carry on the work of honoring these animals.

Ask About Bones & More
Grass-finished bison is naturally leaner, higher in protein, and lower in fat and calories than equivalent cuts of beef. We provide our customers with nutritional information for our cuts. Just ask and we’ll send it over.
